Sheesh. I haven't posted a soup recipe since last year. Time to change that! This soup was a fail-win. It exactly didn't turn out in line with my original expectation (fail), but super delicious nonetheless (win), so I'm blogging it. My original idea was to create a vegan cream of mushroom soup. That could have been really simple. 1 whole Shallot, sliced 4 cloves Garlic, smashed and skin removed 4 cups Vegetable Stock 3 stems Fresh Thyme 1/2 teaspoon Kosher Salt and Ground Black Pepper 1 cup Whole Milk 1 cup Parmesan Cheese, shredded 2 tablespoons Olive Oil 1 package {4 ounces} Cremini Mushrooms, thinly sliced Roast the cauliflower in a preheated 400F/200C oven until lightly golden brown, about 20-30 minutes. Meanwhile, heat the oil in a large sauce pan over medium heat. Add the whites of the leeks and and saute until tender, about 5 minutes. Add the garlic and saute until fragrant, about a minute. Please the mushrooms on the bottom rack and the cauliflower on the middle rack of the oven. Roast for 30 minutes or until the cauliflower is beginning to turn golden brown and both vegetables are fork tender. Meanwhile, in a large dutch oven pot, melt the butter. Add the shallot and cook 3-5 minutes, stirring occasionally. You know what's healthy? Honoring your body. Period. So perhaps a better word to describe the beneficial properties of this soup would be "nourishing". Either way, this cream of mushroom soup is packed with vitamins and minerals, tastes like straight butter and cream, and is ultra satisfying. A win-win-win in my book.
