Camellias, like many woody plants, stop growing in the autumn and go into a period of relative inactivity, (dormancy). Leaves stop manufacturing the sugars needed for normal activity and 'the sap' (liquid sugars), stops moving through the plants; they are gradually stored as immobile starch granules, just under the bark. From the 1840s to 1940s, Magnolia Plantation introduced some 150 cultivars of Camellia japonica to America; new propagation efforts have recently brought dozens of these to the on-site Gilliard Garden Center. Above are just a few blooms (and one sleepy frog) from the gardens' 20,000 camellia plants. Camellia sinensis (Tea Plant) is a slow-growing, large, upright evergreen shrub with leathery, lance-shaped, toothed, glossy dark green leaves, 5 in. long (12 cm). Fragrant, white flowers, 1.5 in. across (4 cm), adorned with many golden-yellow stamens appear in fall to early winter. The flowers attract bees, and it is mildly resistant to damage by deer.

A mixture of old and new camellia varietals are planted in shady garden nooks. Camellias are carved in the wood of the teahouse, named the "Hall of the Jade Camellia". While most Camellias thrive in zones 7 - 9, there are some varieties that can be grown in colder temperatures (zone 6) and or warmer ones (zone 10).
