Once the olive oil is hot, add the bacon and cook the strips until they are crisp. Use tongs to remove the bacon and transfer it to the slow cooker. Keep the skillet warm and add the cubed stew beef.

1. Preheat the oven to 165°C/329°F 2. Pat the beef dry and season with the salt and pepper. In a large Dutch oven, heat 1 tablespoon of garlic infused oil over medium-high heat. Brown the meat in 3 or 4 batches, turning with tongs, for about 5 minutes per batch; add 1tbsp oil for each batch. Transfer the meat to your slow cooker and add the beef broth, rutabaga, carrots, and thyme. Cook on low for 7-8 hours. When the cooking cycle has completed, combine the butter and flour to make a paste and whisk it into the stew. Re-cover the slow cooker and cook for an additional 30 minutes (or until the broth thickens).
