Place the biscuits into the Thermomix bowl and crush on Speed 8 for 10 seconds. Set aside. Place the butter, condensed milk and cocoa into the Thermomix bowl and melt on Speed 2, 50 degrees for 3 minutes (or until completely melted). Add the crushed biscuits, rice bubbles and 1 cup of halved Maltesers. Melt the chocolate pieces in the microwave at medium power in short, 30 second bursts, stirring in between, until the chocolate is melted and smooth. Add the oil and stir to combine. Pour the melted chocolate over the top of the slice and top with extra crushed Maltesers to decorate, if desired.

Melt the mixture together over low heat with the water underneath just simmering. Remove the bowl from the heat and stir until smooth. Pour the chocolate over the cereal mixture and stir until it's evenly coated. Press the mixture into the bottom of the prepared pan and place in the fridge for about 30 minutes. 100g Butter. 395g Can Sweetened Condensed Milk. 250g packet of Plain Biscuits (I use Superwines) ½ Cup (40g) Desiccated Coconut. 2 TBSP Cocoa Powder. 1 Cup Maltesers, halved. 1 ½ Cups (225g) Dark Chocolate (Melts, Drops, or your favourite dark chocolate block) 1 TBSP Vegetable Oil. Add the crushed biscuits and the remaining Maltesers and mix for 30 seconds on speed 3. Pour the mixture into your prepared slice tin and flatten the surface using the back of a metal spoon. In a clean Thermomix bowl, add the white chocolate pieces and cook for 2 minutes at 60 degrees on speed 2 or until it has melted. Press into the base of a baking paper lined 8×8 inch square tin. Chill in the fridge. Combine the unwrapped caramels and ¼ cup cream in a saucepan and heat over low, stirring until fully melted together. Mix in the remaining 1/4 teaspoon salt. Pour the caramel over the cookie base. Place back in the fridge. Conventional Method. Grease and line a 20cm X 30cm rectangular slice tin with baking paper and set aside. Place the sweetened condensed milk, chocolate melts and butter into a microwave-safe bowl. Melt in the microwave on 50% power in 30 second bursts until melted and smooth (approximately 3 minutes).

Line a small lamington tray with baking paper. Crush the biscuits in a food processor. Pour into a large bowl. Roughly chop the maltesers and add to the bowl with the crushed biscuits. Add the butter, chocolate and syrup together in a saucepan or in a microwavable bowl. Cook over low heat until all melted and mixed together. Stir until all ingredients are well combined. Transfer the slice mixture to the prepared slice tin and press down firmly with the back of a spoon. Melt the extra milk chocolate in a microwave safe bowl and spread evenly over the slice. Top with the remaining Maltesers. Place the slice in the fridge overnight to set. Method. 1. Grease 20cm x 30cm rectangular pan; line base and long sides with baking paper, extending paper 5cm over sides. 2. Process 200g of the biscuits until fine; chop remaining biscuits coarsely. 3. Reserve 40 whole choc-malt balls; coarsely chop 1 cup of the remaining balls. Reserve any extra choc-malt balls for another use. Add the butter, cocoa powder, golden syrup and milk chocolate to a saucepan and melt together over a low heat, stirring frequently until smooth. Set aside to cool for 5 minutes. Add the crushed biscuits to the pan and stir together until completely combined. Add the Maltesers and stir again.
