Mapo Tofu
Cook the tofu over low heat for five minutes. Let the tofu absorb the flavor of the seasoning ingredients. Be gentle as the tofu can break easily. Add 1 tablespoon of cornflour slurry to the tofu over medium heat. Combine the slurry with the sauce so that the gravy is thick enough to adhere to the tofu. Turn up the heat to medium, and add the mushrooms. Caramelize the mushrooms, about 5 minutes. Add the spicy bean sauce and chili oil to the mixture and stir it in well. Turn up the heat to high, and add ⅔ cups water or broth and stir. Bring the mixture up to a simmer, and allow to bubble for 1 minute. Prepare and gather the ingredients, before you heat the wok. First, heat the wok/pan over medium heat, drizzle oil and saute the garlic and ginger for a few seconds until fragrant. Next, add the fermented black beans and follow with the crushed chillies and Sichuan peppercorns. Cook for a few seconds until fragrant. Add garlic, ginger, scallion whites, chives, and yacai (if using). Stir-fry until fragrant, about 30 seconds. Add chopped mushrooms and stir-fry to combine. Add fermented chili broad bean paste and stir until all the vegetables are well coated. Stir mushroom liquid mixture to incorporate cornstarch, then add to wok.
