Claypot chicken rice is one of Malaysian's favourite dish and can be easily made at home. There are many variation of it. My favourite version is in my 'One Pot Wonders' cookbook which includes flavourful ingredients like salted fish, sesame oil, pepper and belacan chili. In a small bowl, mix together the soy sauce, seasoned soy sauce (or more light soy sauce), dark soy sauce, fish sauce, sugar, and white pepper. After 10 minutes, uncover the pot and pour the sauce evenly over the rice. Cover it back up and simmer for another 3 minutes.

Known as Bao Zai Fan/煲仔饭 in Chinese, clay pot rice (aka Chinese rice casserole) is a mouthwatering street food popular in Canton and Hong Kong, the region where Cantonese cuisine dominates. Essentially, it's rice with one or more savory toppings cooked in a traditional clay pot and served with a soy sauce based seasoning mix. Claypot chicken rice is dish of rice cooked with chicken drizzled with a savoury, slightly sweet sauce. I attempted this in a rice cooker and loved the results! The best thing about this is that I get to cook the whole meal in the rice cooker, cutting down on the pots and pans that I use. 1 Hr Servings: 4 This recipe is a godsend for those of you who do not own a claypot. We tweaked the recipe a little so you get all the yummy flavours of a typical claypot rice minus the all the hassles! Rather than just throwing everything in the rice cooker, we pre-fry the ingredients in a wok to give it more colour and flavours. Using a pair of chopsticks, ventilate the rice by poking a few shallow holes on the surface of the rice. Slide the marinated chicken, ginger, and shiitake mushrooms onto the rice in an even layer. Cover clay pot with lid and allow rice and chicken to cook on low heat until the rice begins to crackle, about 10 minutes.
Season with light soy sauce, dark soy sauce and white pepper. The dark soy sauce gives the rice a lovely brown colour and does not make the dish any more salty. Stir to mix well. At this stage, transfer everything in the rice cooker, add the water and hit the "START" button on the rice cooker. About 30 minutes later, the rice was ready. Turn off the heat and transfer the contents of the wok to the claypot. Add the water, then cover and increase the heat to medium. Leave the ingredients to cook for about an hour, checking-in every 15 minutes and giving the rice a stir or two. After an hour, add the vegetables, cover and turn the heat to low for 10 minutes.
