Place in the oven and cook for 40 minutes, giving a stir after 20 minutes. Remove from the oven and remove the garlic cloves from the tray. Squeeze the flesh from the skins and discard the skins. Add the roasted vegetables (including garlic) into the Thermomix bowl. Add the stock and blend for 1 minute / speed 9.

Blend for 1 minute/speed 9. 800 - 1000 g pumpkin flesh, cut in pieces (1-2 cm) ½ tsp coriander seeds. ½ tsp cumin seeds. ½ tsp fine sea salt. 1 pinch ground cayenne pepper. 1 pinch dried thyme. 1 garlic clove. 50 g extra virgin olive oil, plus extra for serving. 100 g orange juice.
