In this Instant Pot lamb roast recipe, we are taking inspiration from Greek cuisine. Using a pressure cooker is a efficient way to make a savory lamb shoulder steak. Unlike microwaves, a pressure cooker seals in the juices that flavor the meat, rather than drying it out; unlike boiling, baking and other methods of cooking, it will preserve more of the meat's natural nutrients. Boneless lamb shoulder: Cook for 45 to 60 minutes on high pressure. Lamb Shanks Lamb shanks: Cook for 60 to 75 minutes on high pressure. Natural Release Vs. Quick Release After the lamb has finished cooking, you'll need to release the pressure. There are two ways to do this: natural release and quick release. And, it's not the weight so much as the thickness. The heat has to penetrate into the center of that blocky piece of lamb. "90 minutes!" I can hear you saying. "That's not fast!" 1 tablespoon olive oil 3 pounds lamb shoulder chops, cut ¾-inch thick (I got 4 chops) 1½ teaspoons fine sea salt 1 medium onion, diced 3 cloves garlic, peeled and smashed Marinate the lamb for at least 30 minutes to enhance the flavors. Make sure to thoroughly deglaze the Instant Pot after browning the lamb to prevent burning. Adjust the cooking time based on the thickness of your lamb steaks or shoulder. Let the lamb rest for a few minutes before serving to allow the juices to redistribute.
