Unlike its beet red cousins, it is pale orange in colour, acquiring its colouration from the use of dairy cream. It is a thick hardy soup and can be a meal in itself, when accompanied with home-baked bread and cheddar cheese. The Doukhobors are a pacifist Russian sect who take their anti-violence belief all the way over to not eating meat. But they make up for it with copious amounts of butter and cream.

Place the first six ingredients in a large soup kettle or Dutch oven; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until beef is tender. Meanwhile, in a skillet, saute beets in 1 tablespoon oil for 3 minutes. stir in vinegar; set aside. Remove beef with a slotted spoon; cool. Remove meat from the bones; discard bones.
