Instructions. Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with parchment paper, and set aside. Place the butter, sugar, cocoa powder, and salt into a large microwave-safe bowl, and heat for 30 seconds. Pour the mini eggs into the brownie mixture and mix together until evenly distributed. Pour the mini egg brownie mixture into a lined baking tin and spread evenly with a spatula. Then bake in the oven for 25 minutes. Leave the mixture to cool down completely before cutting into it. To test if the mini egg brownie is cooked, insert a skewer in the centre. If it comes out with runny raw batter on, place the brownies back in the oven for another 2 minutes. If the skewer comes out with chunks of sticky batter on it, it is ready. Storage.
