Homemade Rhubarb Strawberry Pineapple Jam is a delightful condiment and one that's easy to make gluten-free. In a large pan, combine the chopped rhubarb, crushed strawberries, crushed pineapple, and the sugar. Bring the above mixture to a boil over medium-high heat ( stir to prevent sticking and burning ), then reduce heat and allow mixture to simmer on low heat for about 20 minutes. Be sure to continue to stir often to avoid sticking and burning. In a large, heavy-bottomed pot, mix together the rhubarb and the pineapple, and heat over medium-high heat until the pineapple juice begins to simmer, 1-2 minutes. Reduce the heat to medium, cover, and simmer for about 5 minutes or until the rhubarb is just beginning to turn tender. (It will fully soften and break down later.) Method: Place the rhubarb, sugar and pineapple in a pan and simmer until all the fruit is softened, stirring to prevent the sugar catching on the base of the pan. Add the jelly crystals and stir until dissolved. Pour in to warm sterilised jars and put on lids.

2020 Update. Rather than the gelatin or jelly powder in this recipe, I have now switched to using low sugar pectin in this jam. I use it a lot these days, like in our Blueberry Lime Jam. You can read more about it in that recipe. The great thing about that type of pectin is that there is no minimum amount of sugar necessary for the pectin to work. Instructions In a medium saucepan add rhubarb, sugar and crushed pineapples, boil for around 10 minutes, stirring occasionally, until rhubarb is broken apart and bubbling into a stew.
