Ham Leek and Potato Soup (quick & hearty) Savory With Soul

2 tablespoons unsalted butter. 1 large or 2 small leeks to make 4 cups thinly sliced leeks, white and light green parts only (see How to Clean Leeks) 4 cups chicken broth. 2 large russet potatoes (about 1 pound), peeled, cut into 1/2-inch pieces. 1/2 teaspoon ground white pepper. 2 cups ham, diced. 1/4 to 1/2 cup cream, half-and-half, or. 1. Add water and chicken broth to a large pot. Bring to a boil. Cut the vegetables and ham. 2. Melt butter in a skillet over medium heat. Add leek, celery and carrots, saute for 7 minutes. 3. Add potatoes to the pot, bring to a boil, reduce heat and cook for 10 minutes.

Heat a large heavy pot or Dutch oven to medium heat. Add oil and leeks and cook 5 minutes or until leeks are softened. Add carrot, potatoes, ham, black pepper, salt, and broth. Bring to a boil. Turn heat to low, cover, and simmer 30 minutes or until potatoes and carrots are done. Step 1 - Chop your potatoes and boil them in a large pot of water over high heat as you would make mashed potatoes, about 30 minutes. Remove from heat, and cool sightly. Puree soup until chunky-smooth by transferring, in batches to a blender, or by using a hand-held immersion blender. Return soup to stove-top. Add, ham and milk, and heat through.

When the leeks start to soften, add the ham and the potatoes. Top up with the stock. Set the slow cooker to high and cook for 4 hours, or until the ham is tender and the potatoes soft. When everything is cooked, if you want the soup a bit thicker, roughly mash up some of the potato with a potato masher, just enough to thicken the soup slightly. Place the potatoes and ham in a slow cooker. Sprinkle with the seasoned salt. In a skillet over medium heat, melt the butter. Add the leeks and saute until tender. Cook leeks in butter to soften: Melt butter on medium heat in a 3 to 4 quart thick-bottomed pot. Add the chopped leeks, stir to coat with the butter. Cover the pot and reduce the heat to low, cook for 10 minutes until the leeks are softened. Check to make sure the leeks are not browning.

Add the ham bone or shank, stock, bay leaves, and thyme: Add the ham bone or ham shank to the pot. Add 6 cups of stock. Add bay leaves and thyme. Bring to a boil, lower the heat to maintain a simmer. Cover and simmer for 45 minutes. Reduce the heat to medium-low and cook, uncovered, until the potatoes are tender, 15 to 20 minutes. 3 Remove the thyme sprigs. Transfer about 4 cups of the soup to a blender. Remove the top insert from the lid and cover with a kitchen towel. Puree until smooth, 30 seconds. In a large heavy-based saucepan, melt butter and oil together over medium heat. Toss in leeks and garlic and stir well. Reduce the heat, cover and cook for about 15 minutes or until leeks have softened, stirring occasionally. Then add the ham hock, potato and chicken stock. If the stock doesn't quite cover the ham and potato add a little. Heat butter in a large saucepan or Dutch oven over medium heat until melted. Melt the butter over medium heat in a large soup pot. Add the leeks and garlic and cook, stirring regularly, until soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown. Add the potatoes, broth, bay leaves, thyme, salt and pepper to pot and bring to a boil. Instructions. Melt the butter in a heavy cooking pot and cook the leeks until soft but not brown. Next add the potatoes, stock, parsley and salt & pepper. bring to the boil and turn down to simmer for 45 minutes. Nexy add the cubed ham and cook gently for a further 3 - 4 minutes.
