Brenda Gantt here! I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook. Melt butter in saucepan, heat to boiling, stirring constantly. Simmer 1 minute being careful not to let the butter burn! Slowly add cream and heat to a low boil to reduce, stirring constantly. Boil for 3 minutes. Reduce heat, add gorgonzola, parmesan, and nutmeg. Stir until melted. Serve sauce over noodles and top with chicken. Meanwhile, in a large skillet over medium heat, brown chicken in oil on all sides. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Add cream and broth; cook until sauce is slightly thickened and chicken is no longer pink. Stir in the Gorgonzola cheese, sage, salt and pepper; cook just until cheese is melted. Let the butter soften. Remove the rind from the gorgonzola cheese and mash it with a fork on a plate. Blend the butter with the gorgonzola very well. You must have a creamy sauce. Pour the sauce into a pan, dilute the sauce with the light cream. Season to taste with salt and pepper. Warm up the sauce on low heat, in bain-marie, until it thickens.
