Instructions. In a medium pot, heat the coconut oil over medium heat. Add the onion, garlic, jalapeno or chile, galangal or ginger, lemongrass, and red curry paste and cook, stirring frequently, for 5 minutes, or until onions are softened. Add chicken broth and bring to a boil. As the chicken cooks, clean and slice the mushrooms and trim off any tough stems. Once the chicken is cooked through, add the mushrooms to the pot along with the coconut milk and remaining whole lime leaves. Stir the mixture to mix, cover and cook a minute or two more then add the sugar, fish sauce and lime juice. Once boiling, add the coconut milk, chicken, red bell pepper, mushrooms, and kaffir lime leaves (if using). Give it a stir. Bring back up to a boil, and then boil for 3 minutes, or until the chicken is fully cooked. Remove from the heat and stir in the scallion and cilantro. Add the fresh lime juice and give it a stir. Add water (or broth), lemongrass, lime leaves, galangal, and Thai pepper (if using) to a large soup pot. Bring to boil then simmer for 10 minutes to allow aromatics to season the water. With the water still simmering add chicken and allow to cook for 5 minutes. Once chicken is cooked, lower heat and add mushrooms, fish sauce, and coconut milk.
