Tom Kha Tofu is a delicious Thai coconut soup. If you have ever eaten at a Thai restaurant you have probably had Tom Kha. It is a light coconut based soup that is creamy and tangy. Whether it has chicken, shrimp or tofu, I always want it. Seriously. Tom kha gai, or Thai coconut chicken soup, is a spicy and sour hot soup made with coconut milk. The heat comes from chili-garlic sauce and the sour from the lime juice. You can use thinly sliced chicken or cubed tofu for a vegan version! The term 'Tom Kha' translates to boiling galangal, and 'gai' means chicken. Tom Kha is creamy, flavorful, and slightly tangy due to the addition of lime juice.
