In 2016 Monsieur Etienne sold his restaurant to his long-time deputy chef. Guilhem Sevin, who had worked there for 16 years. The restaurant has been renamed Sevin and lost its Michelin star in 2021 - but is still well worth visiting. Our own meal, reported here, was during Monsieur Etienne's tenure but gives an idea of the atmosphere of the place.
