Kerala Style Mussels Fry (Kallumakkaya Varattiyathu) Recipe A Little Bit of Spice

Add the turmeric powder and grated coconut and saute for a few seconds. Add the cooked mussel meat and mix well. Add the crushed red chillies, garam masala and mix well. Cover it and cook for a few more minutes. Turn off the flame and let it cook till it is well blended. Serve the mussels or kallumakkayas hot with Rice. Place 2 to 3 inch of water in a saucepan with a steamer and bring to a boil. Add the mussels to the steamer and cover. Reduce heat to medium and let it cook for 3 to 4 minutes. Take it out of the steamer and de-shell. It's easy to open up the shell once it's steamed.

Now add the crushed ginger and garlic and saute for 2 minutes. Add 1 tsp salt and the spice powders and saute for sometime till the spice powders are well roasted with the other ingredients. Add the mussels now and stir fry for 10 minutes. Cover the pan with a lid and turn the flame low to let the mussels cook for 4-5 minutes more. Place a steaming rack (elevated, perforated plate) over simmering water. Place the stuffed mussels on the rack. Cover and steam for 20-25 minutes (or till no longer sticky). Top up the boiling water below as needed. Allow to cool slightly. Remove the shells, making sure the meat sticks to the steamed dumpling. Heat oil in a vessel and deep fry the mussels. Drain and keep aside. Heat oil in a pan and saute onion until it is golden brown in colour. Add tomato, green chilly, ginger - garlic paste, curry leaves, coriander leaves and saute for 5 minutes. Add fried mussels, garam masala powder, required salt and saute for 2 minutes. Add ground turmeric, ground coriander, garam masala, ground black pepper and red chili powder. Season with salt. Sauté, stirring constantly, for a minute or until fragrant. Add tomatoes. Cook, stirring occasionally, for 2-3 minutes or until the tomatoes break down and turn mushy. Stir in cooked mussels. Add a little water if needed.
