If you are interested in tracking the diseases in-game, there is a debugging interaction called "Dump Survey" which creates a log of all the diseases in your town. The incubation period is separate from those. Increasing the disease stage ratio to 200 would increase all three: incubation, contagious, and remission periods. If you increase to 200, the disease might spread faster due to a longer contagious period. If you decrease to 50 the disease also might spread faster due to a lower incubation period.
