Sorry to say, but these sensors won't appear in Apple Home. Only supported Mi zigbee sensors and devices are homekit compatible. Look for Homebridge and Home Assistant. I have the same hub using Xiaomi Gateway 3 integration for home assistant and I'm able expose the sensors to HomeKit that way.
