Bubur ketan hitam is a traditional sweet porridge originating from Indonesia. It's usually made with a combination of coconut milk, palm or cane sugar, and black glutinous rice. Despite the name, once cooked, the rice turns dark purple, not black. The dish can be enriched with pandan leaves and salt for extra aroma. Reduce heat to low and let the rice simmer and bubble for 45-50 minutes. Give the porridge a stir from time to time to make sure the rice doesn't stick and burn to the bottom. Remove the pandan leaf knot. Dissolve sugar with the porridge liquid in a separate small bowl. Add the syrup into the porridge as well as salt.
Instructions. Wash the black rice thoroughly and drain. Put the black rice and the water in a large pot. Bring to a boil. Lower the heat, and leave to simmer. After an hour, add the sugar, salt, and pandan leaves. Simmer for another hour, until the rice is so soft it's barely distinguishable from the water. Adjust sugar. The salt will highlight the sweetness of the rice. During the last 15 minutes or so, melt the Gula Jawa in 50 ml boiling water on low heat to make a syrup. Add this sugar syrup to the rice. Stir and let simmer til it's completely absorbed with the rice. Serve the black rice porridge in bowls. Drizzle the salted coconut milk on top.
