Step 1. In a medium bowl, season the chicken pieces with the salt and white pepper. Step 2. In a large wok or skillet, heat 1 tablespoon oil over high heat until it melts or shimmers. Fry the chicken, stirring frequently, until cooked through, about 5 minutes. Remove and set aside. Add chilli and garlic, stir for 10 seconds. Add onion, cook for 1 minute. Add chicken, cook until it mostly turns white, then add 1 tbsp kecap manis and cook for a further 1 minute or until chicken is mostly cooked through and a bit caramelised. Add rice, 2 tbsp kecap manis and shrimp paste, if using.

Nasi goreng ayam, or chicken fried rice in english, is a very traditional Indonesian dish. I've probably eaten and made this dish more than any dish ever! To make nasi goreng ayam, start by cooking rice a few hours in advance at least! Stir-fry some chicken, vegetables and eggs, all separately. Fry the rice with a lot of spices and the rest. Using a mandolin or sharp knife, peel and slice the shallots very thinly. Heat enough oil to cover the shallots in a pan over medium heat. Add the shallots and deep-fry, turning as needed, for about 8 to 10 minutes or until golden brown. Immediately remove from heat with a slotted spoon and drain on paper towels. Remove and set aside. STEP 2. Add another tbsp of oil to the pan, add the garlic, galangal and shallots, and cook over a medium-high heat until fragrant. Add the green beans, spring onions and turmeric, and cook for 1 minute. STEP 3. Add the rice to the pan, breaking up any clumps with a wooden spoon. Nasi goreng ayam is a traditional Indonesian fried rice dish that's also popular in Singapore, Brunei, and Malaysia. Although there are many versions of this nasi goreng variety, it is usually made with a combination of chicken thighs, oil, salt, white pepper, shallots, rice, turmeric, soy sauce, fish sauce, galangal or ginger, garlic, scallions, kecap manis, and hot peppers Drain and set aside. Over medium high heat, saute chicken rice aromatics in butter: garlic, ginger, lemongrass, star anise, cardamom and cinnamon stick until fragrant. Add rice and stir to coat, cooking for a minute. Transfer to a rice cooker, pour in chicken stock and season with salt if needed. Dish and serve with fried chicken drizzled in. Stir-fry for 6 minutes. Add prawns and green beans, cook for a further 5 minutes. Add cooked rice and stir until well coated and heated through. Spoon into four serving bowls. Fry the eggs and place on top of the Nasi Goreng. Serve with lettuce, cucumber and tomatoes. Tip: Substitute the chicken and prawns with vegetables. Return the chicken to the pan. Season with the kecap manis, fish sauce, light soy sauce and a large pinch of white pepper, and extra salt if needed. Meanwhile, fry the eggs. Place a large non-stick frying pan over a medium-high heat and add 1 tablespoon of oil. Once shimmering, crack the eggs directly into the oil.

Step 04. Heat oil in a large wok or pan over high heat until it shimmers. Add the spice paste and constantly stir while scraping the bottom of the wok or pan to prevent the paste from burning. Cook the paste until a pungent aroma fills your kitchen and it turns a few shades darker, around 2 to 3 minutes. Add the shredded chicken and ground pepper to the spice paste. Stir fry at medium-high heat until the chicken is covered with the spice, and it is cooked through. Add the rice to the chicken and break any lumps and clumps in the rice. Toss and stir. Drizzle the sweet soy sauce over the rice.
Combine paste, chicken and onion in a large pan over medium heat. Stir-fry for 6 mins. Add prawns and green beans, cook for a further 5 mins. Add cooked rice and stir until well coated and heated through. Spoon into four serving bowls. Fry the eggs and place on top of the Nasi Goreng. Serve with lettuce, cucumber and tomatoes. In batches, deep fry for 15 to 20 minutes until chicken is crispy, golden brown in colour and juices run clear. Once done, remove the fried chicken from oil using strainer. Drain the fried chicken on paper towel to remove excess oil. Also remove the fried spiced crumbs from the oil and set aside to drain off excess oil.
