Brush the top with the beaten egg. Bake for about 18-20 minutes or until risen and golden brown. Remove from the oven and allow to cool completely. While the pastry is cooling, prepare the fillings. Slice the strawberries and set aside. Method. Cream softened butter, cream cheese and caster sugar until light and fluffy. Add vanilla essence and dissolved gelatine and beat well. Fold in a few sliced strawberries. Line base of 30 cm x 25 cm pan with non-stick paper. Cover base with the lattice biscuits, flat side facing down.

Line the base of a 20cm square tin with baking paper. In a food processor, place the biscuits and blitz to a fine crumb. Add the melted butter and blitz again until combined. Pour into the lined tin. Spread out to the edges and smooth the top with a spatula. Place in the fridge to chill while you make the topping. Refrigerate for 30 minutes or until firm. Drain the coconut and squeeze out any liquid. Place the coconut in a food processor, and add the strawberries, coconut cream, vanilla, maple syrup and coconut oil. Process, scraping down the sides occasionally, for 2-3 minutes. Spoon into the tart tin and smooth the top.
