If you're talking recent anime, there's not much difference anymore, as "fansubs" by groups like Commie, Chihiro, Doki, FFF, Vivid, and the like are just edits. Can't mention "interesting fansub groups" without bringing up groups like gg or to a much lesser extent, coalguys. gg I think was one of the groups that helped made Code Geass so popular on the internet, especially with their sudden trollsubs mid episode. However, some fansubs are bad beyond belief. Additionally, many of the "extra features" and technical tricks used in fansubbing can result in subtitles that emphasize aesthetics over readability. Common problems associated with fansubs include translations trying to be "more interesting/mature" and name confusion between different translations.

The cons of fansubs: You might get low-quality results. Not subbing your content can alienate audiences. Many fansubbers are non-native speakers. Fansubbers are not professional subtitle engineers or translators. You need a very strong fan base to get your content fansubbed. Essentially, it all comes down to a cost vs quality. The thing is a fansub group may do more research, like being familiar with the manga and how the fanbase already adopted some phrases or names or dedicate more of their time to proof read - they don't have tight schedules like simulcasts and they take a few series at once not the whole crunchyroll lineup.

For older shows, Exiled-Destiny is my go to. Some-stuffs is really good if you watch JoJo's or Pokemon. For seasonal shows, I'll almost always grab a fansub group over erai/subsplease (crunchyroll subs). Asenshi is particularly good, though their BD encodes aren't always the best. Also good for seasonal shows are GJM and Doki. fansub might shift to series with no official sub or some niche variant of sub, but will certainly very low usage and might put most of fansubbers to retire (probably not all). Edit : This assume official sub become good, which is very subjective metric, i use fansubbers prespective, if they think official sub is good, then 'just retire' is make sense.
