Method. Heat the oven to 220C/200C Fan/Gas 7. Cut the courgette and aubergine into 5mm/¼ in slices. Cut the peppers in 5mm/¼in strips. Place all the vegetables in a roasting tin with the garlic. These easy Roasted Aubergine and Courgettes are sprinkled with sumac and tossed with fresh herbs and a squeeze of lemon before serving.. just minimal chopping and then 30-40 minutes roasting in the oven. Aubergines and courgettes are often misunderstood vegetables as they seem difficult to cook correctly. Sometimes with watery or oily results. Place the aubergine and courgette slices onto the 2 separate baking sheets (1 for aubergine, 1 for courgette) and brush the tops with a little olive oil. Place the trays into the hot oven and roast for 20 minutes. Remove the tray of aubergine and set aside to cool. Leave the courgette slices in the oven for a further 10 minutes. Once roasted.
