Heat a frying pan with a tablespoon of oil. Once hot, add the halloumi patties and fry for about 5 minutes on each side until crisp and golden. Don't move them too much or they will lose their crispy coating. In the meantime, mix mayo, lime juice and sweet chilli in a small bowl. Lightly toast the brioche buns. Make the sauce.
