Have you ever managed to toast an English muffin without burning at least part of it? I haven't. But don't be tempted to turn the heat up. The muffins need the low and slow heat to achieve cooked centers. On a gas stove, they'll take about 10 minutes on the first side, seven on the second. How to make English Muffins 1. Add the yeast to warmed milk, water, and sugar. 2. Once foaming (6-7 minutes) add the egg and melted butter. 3. Combine flour and salt in the bowl of a stand mixer then add the milk and yeast mixture. 4. Mix until the dough is elastic and smooth. Transfer to a large oiled bowl and cover until doubled in size. 5. Mix the dough together: Add the sugar, butter, and salt to the bowl and whisk to combine. Add 3 cups of the flour and stir with a stiff spatula until you form a shaggy, floury dough. Knead the dough: With a dough hook on a stand mixer, knead the dough until it comes together in a smooth ball, 5 to 8 minutes.
