Voeg tot slot ook de courgette toe en roer voorzichtig door. Zorg dat je niet te lang roert want dan worden je muffins droog! Vet een bakvorm met 12 muffinvormpjes in. Sins kort eet ik deze mega gezonde muffins in de vroege ochtend. Ik prep ze altijd op mijn vrije dag, zodat ik direct na het opstaan de deur uit kan. De rijpe mango maakt ze lekker zoet en moist en guess what, er zit zelfs courgette in! Dat maakt dit ontbijt nóg gezonder. Get up & go!
