The first Malatang ramen restaurant in Amsterdam, the Mogu concept allows you to craft your own masterpiece bowl of soup. Grab a bowl, fill it with your favourite ingredients (a variety of mushrooms, noodles, veggies and proteins), have it weighed and choose one of three richly flavoured broths to go with it - including Japanese Miso, Thai Tom Kha or a Sichuan Style soup base. Ramen Kingdom's eggs were perfect: the yolk still oozing, the white properly marinated. The rest of their ramen toppings were equally impeccable: black fungus; wilted spinach; super-fine spring onion; and a dollop of minced pork and sesame. This, foodies, this is Ramen Nirvana. Put bowl in cooking station, press program and then start. After program finish, siff away the cooking water in sink, but leave 1-2 tablespoons of water in bowl, please be careful! The atmosphere is modern and trendy. The tables are benches which seat six, so you might be sharing when they are very crowded. The right side wall is an open kitchen, with four or 5 chefs behind the line. The bar is at the back. We ordered sake from the menu, of which there was only one type, and served hot (€6, small carafe).
