I first came up with this Vegan Big Mac recipe for a friend of mine who had just gone vegan years ago (circa late 2008/early 2009). In a large bowl sift together all dry ingredients. Oat flour, ground sunflower seeds, salt and pepper. Using tongs, transfer cooked veggies into the dry mixture leaving out the excess water. Toss veggies in flour until well combined, and add the 1/4 cup Bragg's Liquid Aminos. Mix well. Finely chopped garlic and shallots add depth of flavor. Crushed walnuts give them a meaty bite. Short grain brown rice, panko bread crumbs, and ground flaxseed help these burgers hold together. DON'T use long-grain brown rice here.
