What is caponata? Caponata Sicilian is one of Sicily's essential dishes. Pronounced ka·puh· naa ·tuh, it is a vegetarian eggplant salad--more like a relish, really--made of eggplant, onions, bell pepper, celery and tomatoes with briny olives and capers. There are variations of this tasty eggplant salad. Most are spiked with vinegar.

The disappointing ones have an oily mouthfeel and no bright, dynamic flavor to back them up. Eggplant caponata is a combination of crispy fried (or roasted) eggplant, onions, celery, capers, and olives simmered to perfection in a sweet and tangy tomato sauce. It's a classic Sicilian recipe. At first glance, one could call it an "eggplant stew" or even a "relish" of some sorts.

Stir well to blend the flavours. Simmer for another 5 minutes then add the cooked pasta to the sauce and mix well. If some reason your sauce seems dry, add a little of the saved pasta cooking water and mix again. Serve immediately with fresh basil or allow to cool and serve as a pasta salad at room temperature. Method. 1. Cut the eggplant into 3/4" cubes. Toss with 1 Tbsp. salt and mix together with your hands; place in a colander and let drain over a bowl for 30-40 minutes. 2. Thinly slice the onion and brown in a pan with 1/4 cup oil over low heat, for around 10 minutes. 3. Drain all the oil from the pan. Return all the vegetables into the pan (including egg plants) add tomato and simmer for about 5 min. Then add olives pignolis, basil. Simmer for 1 min. Then add sugar and vinegar. Simmer about two min. Let the caponata rest at room temperature for several hours, preferably overnight. Like its French cousin, ratatouille, eggplant caponata makes an excellent side dish or appetizer, especially served on crostini or with a basket of crusty bread. Ingredients Makes 3 to 4 cups.
