Often, people think this dish is spicy. But that's not true. In fact, this dish is red, and yet, not necessarily spicy. How does it taste? A good authentic rogan josh is lightly aromatic. It has a lightness to its gravy and no strong dominant ingredient. The few ingredients of the rogan josh recipe give it a delightful but gentle flavor profile. It is not spicy but has a delectable touch of heat. Cook for an hour. After an hour, uncover the pot. Taste and add a little more salt.
