Gochujang Noodles is a popular Korean recipe where rice noodles are coated with a spicy, sticky, thick, and pungent Gochujang sauce (Korean chili pepper paste sauce). Gochujang, along with hoisin sauce, soy sauce, lime juice, garlic, and sugar, gives these noodles a sweet, spicy, savory flavor and bright red color, making them irresistible. Gochujang is a red chili paste made from chili powder, glutinous rice, meju (fermented soybean) powder, yeotgireum (barely malt powder) and salt. This fermented condiment is both sweet and savory, with a major kick of spice. If you've ever had bibimbap, you've probably tried gochujang without even knowing it! Add the chicken broth and shredded rotisserie chicken, then let the broth come to a boil. Add the ramen noodles into the broth and cook according to package directions (usually about 3 minutes). Divide the ramen into two bowls and top with green onion slices, sesame seeds, and hard-cooked eggs. Serve immediately. Gochujang (고추장) is Korean fermented chili pepper paste. Along with ganjang (간장, soy sauce) and doenjang (된장, fermented soybean paste), it's one of the three fundamental fermented sauce or paste, collectively called jang (장).
