Pakistani Chicken Pulao Recipe Yakhni Pulao vs Non-Yakhni Pulao Yakhni just means broth or stock. So Yakhni Pulao is made by simmering bone-in meat to create a broth, which is then used to cook the rice. Without Yakhni, Pulao is a one-pot meal cooked in aromatics, protein or vegetables, whole spices, and water. Start by heating up some oil in a pot or pan and then add some thinly sliced onions. Fry these over a medium to high heat until they turn golden. Add in cumin seeds, cloves, black cardamom, cinnamon, salt and green chilli. Fry this for a few more minutes, until the onions turn a darker shade of gold. In my Chicken Pulao recipe, I've used the typical and traditional method of making a Yakhni Pulao, which involves simmering a broth with the meat and spices, straining the meat and spices out whilst reserving the water, and then frying onions in a separate pot, adding the chicken, stock and rice in and cooking till complete.
