Truffle Ravioli with Mushrooms and Sage is a delicious meatless meal of homemade ravioli dough filled with ricotta cheese and Black Truffle Pecorino cheese. The ravioli are topped with a buttery mushroom and sage sauce. The whole dish is sprinkled with more of the delicious Black Truffle Pecorino cheese. Step 1. Saute the mushrooms on med-high heat till chanterelles brown. Add shallots, garlic & thyme & cook for 2 min. Deglaze pan with wine, cover & cook for 5 min. over med heat. Uncover & let mushroom mixture rest & excess moisture evaporate. Remove from heat, transfer to a food processor & puree. Combine with cheeses, parsley, salt & pepper. In a large skillet over medium heat, melt two tablespoons of butter. Add cracked black pepper and cook for about a minute until toasted. Add about ½ cup reserved pasta water to the skillet and bring it to a simmer. Add the pasta and the rest of the butter. Reduce the heat to low and add the parmesan.

In a saucepan, heat 30g of butter over medium heat, cook off the garlic, tarragon and lemon zest until aromatic (a few minutes). Stir through the pasta, and add a splash of the pasta water to loosen and coat. Divide between bowls and top with the grated truffle pecorino. Serve immediately. About this recipe 2 teaspoon truffle slices in oil For the ravioli filling: Sauté mushrooms in 1 tablespoon olive oil until cooked through. Make sure to cook the mushrooms on high heat so they will not release liquid and become soggy. Take off the heat, add one finely minced garlic clove. Set aside to infuse.

Cook the pasta with the sauce for a minute or two on medium heat, then add half of the truffle. Turn off the heat, add the cheese, truffle butter if using and stir. Add another splash of paste water if needed to make a creamy pasta. Double check the seasoning for salt and pepper and adjust until it tastes good to you. Once ravioli, reserve ½ cup of their cooking liquid. Drain the ravioli and add to the pan with the mushroom cream sauce. If the sauce looks dry add a bit of the reserved pasta cooking water. Turn on the heat to low and toss everything in the pan until the sauce has coated the ravioli, for 1-2 minutes.
