Mix the salt and spices in a small bowl. Layer the cheeks in your slow cooker, sprinkling each layer with part of the spices. Cover and cook on LOW for 8 hours. Thicken the cooking liquids: Mix a cornstarch slurry into the liquids, then cover and cook for 30 more minutes on HIGH until the liquids are thickened. Pour the onion mixture into the slow cooker and place the beef cheeks on top. Pour the wine into the pot and return to heat. Turn the heat up to high, bring to simmer and let it simmer for 1 minute (to cook out the wine a bit). Scrape the brown bits off the bottom of the pan so it mixes in with the wine.

Pour the braising liquid into a small saucepan and simmer over medium. Place the beef cheeks on a work surface and pat dry with paper towels. Optional (for extra flavor): Place a skillet over medium-high heat. When hot, add the olive oil and beef cheeks. Fry for 2 minutes until lightly browned. Flip and repeat for the other side. Transfer the beef cheeks to the crock pot. You can substitute the beef cheeks for any other beef cut suitable for slow cooking. 2.
