Instructions Preheat the oven to 180°C. Wash the fish inside and out, then pat dry with kitchen paper. Score the skin with a sharp knife on both sides. Thinly slice the garlic, chilli and ginger. Put one piece of each into the cuts. Thinly slice the lime. Put a row of these in the roasting tray and place the fish on top. Transfer the fish to a kitchen paper towel lined plate. Wipe the wok with paper kitchen towels and heat the remaining oil. Add the chilli bean sauce, stir-fry for a minute, then add the chopped ginger, garlic, spring onions, and chilli flakes (if used). Stir-fry for 2-3 minutes. Pour in the stock and bring to the boil. Drain and dry the wok, add the vegetable oil and heat until smoking. Add the soybeans and stir-fry for 30 seconds, then add the garlic, chillies and sauce. Bring to a vigorous boil, then add half the coriander and continue to cook for 1 minute until the sauce has thickened and reduced by at least a third. Pour the sauce over the steamed fish. 1. Remove any scales from your fish using a serrated steak knife. The areas to look for are the belly and the edges of the fish including the top, near the dorsal fins, and the head.
